Preheat oven to 375. Beat butter in large bowl until creamy.
Blend in eggs, juice, and applesauce. Combine dry ingredients. Gradually add to egg
mixture, beating until well blended. Stir in apples. Spread batter evenly into greased
8" square baking pan. Bake 20-25 minutes, until wooden pick inserted in centre comes
out clean.
Cool on wire rack. Cut into squares. Serve warm or at room temperature, with Creamy
Topping if desired.
Creamy Topping: Using an electric mixer beat cream in small bowl at high speed until soft
peaks form. Beat in vanilla and cinnamon until stiff peaks form.
"I prefer a cake with a
little more sweetener, but this would be an excellent recipe for anyone wanting to reduce
their sugar intake."
Lynn Russell, tester
Webmaster's Note: Those wanting a more sweet
taste without sugar could try adding about 1/8 tsp. Stevia
extract powder to the recipe. Generally, this amount of Stevia extract is equal to about
1/2 cup of sugar, but this can vary depending on the brand of Stevia you use.
