Crunchy Carob Brownies
Yield: 20 Squares   VG

1/3 c Vegetable oil; preferably
-- olive oil
1/3 c Honey
2 tb Lecithin granules
2 Eggs
1 ts Vanilla
1 c Whole wheat pastry flour
2 tb Soy flour
1/4 c Bran
2 tb Milk powder
1/2 c Carob powder
1/3 c Chopped walnuts

GARNISH
Grapenuts cereal, millet and sesame seeds.

Preheat oven to 325F.

In food processor, blender, or mixing bowl, blend the oil, honey, lecithin, eggs, and vanilla until smooth and creamy. Add the combined flours, bran, and milk and carob powders, and process briefly until ingredients are well-mixed. Mix in the nuts.

Spoon into an 8-inch-square pan lined with parchment paper or greased with a mixture of liquid lecithin and oil. Top with 1 1/2-inch-wide rows of (alternately) Grapenuts, millet, and sesame seeds. Bake for 20 to 25 minutes. Cut into 1 1/2-inch squares.
