Fruit-and-Nut Balls

VE, GF, SF

Yield: 12 Servings

Ingredients

Walnuts   1/2 cup dates, pitted
1/2 cup raisins, dark or golden
2 tbs cocoa -or- carob powder
2 tbs honey
1/2 cup walnuts
1/2 cup sunflower seeds
Additional ingredients: extra walnuts, ground; OR coconut, shredded, unsweetened

Directions

Grind together dates, raisins, cocoa (or carob powder), honey, walnuts and sunflower seeds in a food processor.

Press the mixture into 24 small balls. Roll in the ground nuts or shredded coconut. Store in an airtight container.

"Very good. The original recipe did not include the honey. . . I added it because I felt the mixture needed a binder. I didn't have cocoa or carob powder so I left it out. I think it would be good though. I rolled the balls in unsweetened coconut."

Webmaster's Note: those wanting a less sweet recipe can try using a small amount of almond butter as a binder instead of the honey.
