Vegan Pumpkin Pie

Yield: 1 pie
Ingredients
10 oz firm silken tofu
1 ea 15 oz can pumpkin
1/2 cup granulated date sugar OR
-- other natural granulated sugar
1/3 cup oil
2 tbs molasses
1 tsp vanilla extract
2 1/2 tsp ground cinnamon
1 tsp nutmeg
1 tsp allspice
1/4 tsp ginger
1 unbaked crust of your choice
Directions
Blend all ingredients, pour into pie shell and bake at 350 F for about 1 1/2 hours or until done.
Note that this is even better, if more expensive, if you use 2/3 cup maple syrup instead of the sugar and reduce the oil to a scant 1/4 cup.
