Rich Pound Cake
Yield: 14 Servings  VG, SoF

2 c Whole wheat flour
1 ts Baking soda
1 ts Baking powder
1 ts Cinnamon
1/4 ts Coriander
1/2 c Brown rice syrup
3/4 c Egg Beaters OR 6 Egg whites
1 ts Butter flavouring, optional
1/4 c (to 1/2 c) buttermilk
4 ts Canola oil
1 c Nonfat yogurt

Preheat oven to 350F. Spray a loaf pan with cooking spray and set aside.  Combine dry ingredients in one bowl and wet ingredients in another.  Combine the two, a bit at a time, beating well after each.   Pour into pan and bake 50-60 minutes until golden and a toothpick inserted in center comes out clean. Cool 15 minutes in pan, then remove onto wire rack.
