Tofu Whipped Cream
VE, GF
Ingredients
1/2 cup tahini OR
1/2 cup ground cashew nuts
1 tsp vanilla
4 oz (1/2 block) soft tofu, crumbled
2 - 4 tbs apple or pear juice
2 tbs honey
Directions
In a blender or food processor, blend all ingredients until smooth and creamy. Serve as an icing over sweet breads or as a topping over fresh fruit.
Note: To make this a vegan recipe you can use agave nectar or brown rice syrup in place of the honey.
