Piquant Meat Loaf
Type O and B Recipe

This recipe is made with moose meat. Although Dr. D'Adamo has no data on this type of meat it is close to venison and should be OK for these blood types. Those wanting to stick to the letter of the diet may want to use ground venison instead.

3/4 c Dry bread crumbs
1 c Milk
1 1/2 lb Ground moose
1 Onion, chopped & parboiled
2 Eggs, slightly beaten
1 ts Salt
1/4 ts Pepper
1/2 ts Sage
SAUCE

4 tb Brown sugar
5 tb Vinegar-free ketchup
1/2 ts Nutmeg
1 1/2 ts Dry mustard

Soak crumbs in milk; add meat, eggs, onions and seasoning. Pack lightly in greased loaf pan.  Spread with sauce. Bake 1 to 1 1/4 hrs. at 350 F.

Notes for type O:

Use bread crumbs from allowed types of bread. You will need to omit the nutmeg in this recipe. If you cannot find vinegar-free ketchup try using tomato paste zested up with minced fresh garlic. In place of the milk you could try any allowed liquid of your choice. Ideas include: vegetable or beef broth, or your favourite vegetable juice.

Notes for type B:

Use bread crumbs from allowed types of bread. You need to avoid tomato products so instead of the ketchup-based sauce you could try the onion gravy recipe that we published during recipenet's first year on the web (use olive olive oil in place of safflower). Another option would be the mushroom gravy recipe that was posted a couple of years ago by Lorraine Picot (use spelt or unbleached white flour in place of whole wheat).
