CUCUMBER SAUCE
for salmon or other fish
GF, EF, SF

Yield: 3 cups

1 1/2 cups medium white sauce
2 cups chopped, peeled, seeded cucumbers*

2 tbs lemon juice
Salt, pepper, sugar

Directions

Prepare white sauce. Cook cucumber in 2 tablespoons water and lemon juice for 3 - 4 minutes. Sprinkle with salt, pepper and sugar. Stir in sauce.

*If using English cucumbers, seeding is not necessary, of course!
