Basic White Sauce
GF, EF, SF
Yield: 2 cups
Ingredients
1/4 cup butter
1 tsp salt
1/4 cup flour of choice*
1/8 tsp pepper
2 cups milk
Directions
Melt butter in saucepan ; remove from heat; add flour, salt and pepper; stir until smooth. Add milk a small amount at a time, stirring after each addition; return to medium heat. Bring to boiling, stirring constantly; reduce heat and simmer 1 minute.

* An equal amount of the following flours can substituted for regular wheat flour in this recipe: brown rice, soy or rye flour; potato starch or flour. . . OR a little less of cornstarch or corn flour;
mashed potatoes (prepared or in flake form).
