www.recipenet.org FRESH PARSLEY TEA In restaurants, most meals come with the traditional sprig of parsley. Many people see it as simply a green garnish that makes the meal look pretty, and often leave it on the plate. Given parsley's medicinal properties, perhaps there's more to this tradition than just decoration. Herbalist Jeanne Rose considers parsley a key to good health, declaring that it ". . . comforts the stomach and cleanses the kidneys, spleen and intestines." (Veggie Life, Summer, 2004, p.49). This simple recipe makes two cups of refreshing tea. Drink 1/2 cup before meals and 1/2 cup before going to bed. Ingredients 1 handful fresh parsley, washed Directions Steep in tightly covered tea pot or glass jar until cold. Strain. Store in the refrigerator.
