AVOCADO MAYONNAISE
VN, RF, GF, SF

Ingredients

1 avocado
2 1/2 tbs apple cider vinegar OR--
-- lemon or lime juice
2 tbs cold pressed oil
1 pn salt
Other seasonings as desired

Directions

Slice open avocado and scoop out flesh. Blend with all remaining ingredients using a hand blender. Consistency should be that of a creamy mayonnaise. If using a regular blender you may need to drizzle the oil slowly into the avocado mixture while the machine is running in order to obtain the proper consistency. Store in a sealed container in the fridge.

I love mayonnaise and am always looking for ways to make it with healthier ingredients. In this recipe I used Udo's Choice DHA oil blend. Hemp oil would be another great option. I chose apple cider vinegar and added some dry mustard and a little black pepper to the recipe but you can add the herbs and spices that suit you best. The flavour and consistency of this mayonnaise is very good - the best egg-free one I've made so far.
