Comfort Food: Wheat & Dairy Free
As a kid one of my favourite foods was my
mother's home made macaroni and cheese casserole. I still have not tasted a better recipe
than hers. I have heard moms today say kids are starting to call any macaroni and cheese
dish "Kraft Dinner". If so, then this corporate trademark is becoming generic
just as "Kleenex" became all-encompassing for facial tissues.
My family knew Mom's recipe was no
"Kraft Dinner" and appreciated the difference between the two. Whether it comes
from a box or is lovingly prepared from scratch, there's something about noodles and cheese
that kids just love. So what do you do when your child is wheat and dairy intolerant? You
compromise with a dairy-free recipe and use wheat-free noodles made from grains such as
spelt and kamut (or gluten-free grains such as corn, rice and quinoa).
I tried a wheat
and dairy free macaroni and cheese casserole and really enjoyed it. It wasn't
as good as my mom's traditional recipe of
course, but it was still creamy and delicious.
