CREAMY QUARK SALAD DRESSING OR DIP

I passed by the quark cheese in my health food store's cooler for years, never giving it a second glance. Then one day I noticed just how low in fat it is - 0.25% ! It has no salt and contains the healthy probiotics acidophilus and bifidus. So. . . I decided to give it a try. I found the taste was a cross between cream cheese and sour cream.

I now use quark to make salad dressings and dips. My base recipe is a combination of quark, mayo and flax oil:

Base

1/4 cup quark cheese
1/4 cup mayonnaise
2 tbs flax or hemp oil

Blend above ingredients and add choice of seasonings. The following are some that I have made:

Creamy Cucumber

Add two tablespoons pureed cucumber and one teaspoon celery seed to the base.

Onion and Garlic

Add one tablespoon pureed onion and one clove pureed garlic (or one teaspoon cold pressed garlic juice) to the base.

Zesty Sun-Dried Tomato

Puree two tablespoons rehydrated sun-dried tomatoes into the base along with two to four extra tablespoons of flax or hemp oil. Add one or two teaspoons dried oregano and freshly ground pepper to taste.

These dressings taste great and are very easy to make. What I like is they have a creamy texture and a cheesy flavour without the saturated fat. Hubby really liked all the varieties. You can try my versions or come up with some of your own.

Depending on how runny you like your dressing or dip, you can add more or less of the
flax / hemp oil.
