Kale & Rice Soup
VG, VN, WF, GF, DF, EF  Vita-Mix Recipe

1 c Soy milk, unflavoured;*
--unsweetened
1/4 c Onion
1/3 c Rice or soy cheese*
1/2 c Kale (coarsely chopped)
1/2 md Tomato
8 ea Baby carrots
1/4 ts Salt
1/4 ts Tarragon
1 ts Flour (optional)**)
1/2 ts Sucanat sugar (optional)
1/4 md Garlic clove (or to taste)
3/4 c Hot cooked brown rice

Place all ingredients except brown rice into Vita-Mix in order listed. Secure lid. Starting at low, walk speed up to high and blend for 2 - 4 minutes or until hot. Walk down to lowest speed and add rice blending just long enough for rice to mix in. Serve immediately. Makes 2 servings.

* This recipe was made dairy-free but could easily be made with regular milk and cheese if desired.

** Gluten-free flour may be used.
