Vita-Mix Recipe
Sugar-Free Lemon Slushie
VN, GF, SF
Yield: 2 large servings
Ingredients
4 lemons, peeled *
1 cup water
1/4 tsp stevia extract powder
2 cup ice **
Directions
Place all ingredients into Vita-Mix in order listed. Secure lid and insert tamper. Starting at low, walk speed up to high and blend using tamper to push ice into blades. Blend until mixture forms a thick slurry. Spoon out into tall glasses. Sip slowly with a straw.
Notes
* There is an easier way to peel citrus fruits than the method shown in the Vita-Mix cookbook. Simply cut the fruit in half from top to bottom. Cut the halves into quarters. The peels should then come off fairly easily using fingers. Hold the pieces over the Vita-Mix container to catch any juices. This is the method of peeling used in some Vita-Mix show demonstrations.
** An easy way to measure ice: Fill a measuring cup to the one-cup level. Pour into ice cube tray to see how many cubes equal one cup.
