Sabrina's Argentinean Potato Salad

A few years ago my mom was hosting a family dinner and was wondering what kind of potato dish to serve. Sabrina, my brother's S.O. offered to make this simple, yet fabulous potato salad.
In true Argentinean style, this salad uses lots of vinegar, which Sabrina says is a "table condiment" in that country much like ketchup is in Canada.
Ingredients
8 potatoes, peeled and chopped, white or Yukon gold
1/2 cup olive oil
1/2 cup vinegar
1/2 cooking onion, chopped OR
--
2 green onions, chopped
Directions
Boil potatoes until softened but not mushy. Add rest of ingredients and mix. Serve cold.
