Zesty Tofu Spread

VN, GF

Yield: approx. 12 oz

Ingredients

12 oz tofu
1/2 tsp salt
1 tsp oil (optional)
1 pn cayenne pepper, to taste
Juice of 3 small lemons
2 tbs water

Directions

Place all ingredients in blender and blend until creamy. Taste, adjust seasonings, and blend a little more. Soft tofu will make a thinner spread, firm will make a thicker spread. Silken tofu (either soft or firm) will create a smoother texture.

This spread can be used on bread and crackers or as a veggie/chip dip.

Variations to Season

In place of the cayenne pepper try:

  • 1/4 tsp dill with 1/8 tsp caraway seeds
  • small garlic clove and minced onion (or garlic powder, to taste, with dried minced onion).
