Black Bean and Rice
Salad
Yield: 6 Servings VG, VN, WF, GF,
DF, SF, EF
2 c
Canned black beans (drained
- and rinsed well)
2 c Cooked rice
1 1/2 c Fresh cilantro
1/4 c Lime juice
3/4 c Oil |
1/2 c
Chopped onion
2 Garlic cloves; crushed OR
1/4 to 1/2 ts garlic powder
Salt
Freshly ground black pepper |
Mix the beans, rice, and cilantro together
in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and
garlic and toss with the rice and beans. Add salt and pepper to taste.
