Combine cooled rice, egg
whites, and 1/3 cup mozzarella cheese in a large bowl. Press into 12-inch pizza pan
sprayed with vegetable cooking spray. Bake at 400 degrees for 5 minutes. Combine pizza
sauce, garlic powder, and black pepper in a small bowl; spread over prepared rice crust.
Sprinkle with Parmesan cheese. Layer 1/3 cup mozzarella cheese, mushrooms, olives, and red
pepper. Top with remaining cheese. Bake at 400 for 10 minutes. Garnish with green peppers.
