Easy Miso Soup

Yield: 2 Servings
Miso is a fermented soy bean and grain paste that is nutritious and easy to digest. You can buy the paste ready-to-go at health food stores, asian food stores and some grocery stores.
Ingredients
2 1/2 cups water
1 veggie broth cube
1/4 cup dried vegetable flakes
2 tbs freeze dried chives
1/4 tsp each garlic & ginger powder
1 tsp soy sauce (wheat or gluten-free if needed)*
Handful of rice vermicelli
2 tbs miso
Directions
Add all ingredients except the vermicelli and miso to a pot and bring to a boil.
Reduce to a simmer until vegetable flakes have softened. Add vermicelli. Simmer two minutes, then remove from heat.
Take out 1/2 cup of broth, mix the miso into it and then add back to the soup. Serve.
