Marinated Chickpeas & Vegetables
Yield: 4 Servings VG, VN, WF, GF, DF,
SoF, Ef
1/2 sm Red onion;
thinly sliced
Ice water
2 c Chickpeas, cooked
1/2 c Tomato, diced
1/2 c Green bell pepper, chopped
2 tb Fresh parsley, chopped |
2 tb Lemon juice
3 tb Rice vinegar or apple cider
-vinegar, or to taste
2 ts Olive oil
3 tb Garlic, minced
Salt and pepper to taste |
In a small bowl, cover onions with ice
water. Let stand for 20 minutes to crisp onion and remove acid taste. Drain well and pat
dry.
Combine all ingredients in a large bowl. Let marinate at room temperature overnight before
serving.
