MASHED POTATOES WITH ONION GRAVY

Yield: 8 servings

Ingredients

Basic mashed potatoes made in your favourite style

GRAVY

4 tbs safflower oil
4 lg white onions, finely diced
6 cups water
8 tsp vegetable seasoning OR
-- 4 vegetable bouillon cubes
1 tsp tarragon
1/2  tsp sage
Lg pn nutmeg
1 tsp chervil

Directions

Heat oil in skillet. Add onion and saute, stirring frequently over high heat until onion begins to brown. Add water and seasonings. Bring to a boil, lower to medium heat, and simmer until gravy is reduced to about 3 cups.

Serve with mashed potatoes.
