Millet Salad
Yield: 4 Servings VG, VN, WF, GF, DF, EF,
SoF
1 c
Low fat chicken or vegetable broth
2/3 c Water
1/2 c Millet
1/2 c Dried apricots, chopped |
1/2 c
Carrot, grated
1/4 c Toasted almonds, chopped
1/4 c Green onions, chopped
1/4 ts Saffron |
Using a Plastic Steamer: Fill water
reservoir and turn on machine. Add ingredients to rice bowl and steam for 20 minutes.
Place into 1/2 cup molds and serve on a bed of spinach. Serves 4.
