Pizza Quesadilla
VG, EF, SF
Ingredients
2 flour tortillas
Refried beans
Salsa
Grated cheese
Choice of chopped veggies
Directions
In a fry pan over low heat, place a flour tortilla. Spread refried beans on the tortilla and then spread on salsa. Top with grated cheese and veggies. Top with the remaining tortilla and continue to cook as you would a grilled cheese sandwich. Set aside to cool when cooking is complete. Once cool, it can be cut into triangles and packed into the lunch box.
