Springtime Seaweed Medley

This easy, nutritious dish can be served hot or cold. Use your intuition and add other ingredients to your liking.
Ingredients
4 cups dried nori or seaweed of your choice
1/4 cup sesame seeds
1 tbs toasted sesame oil
2 ea onions, chopped
1 ea carrot grated
2 tbs apple cider or rice vinegar
1 tbs rice or maple syrup
2 tbs wheat-free tamari
Salt, cayenne and ground pepper to taste
Directions
Cover seaweed with cold water for 5 minutes, drain.
Roast sesame seeds in dry skillet for 5 minutes on medium heat, stirring often. Set aside.
Heat oil over medium heat in another skillet and add onions. Saute for 5 minutes until
soft.
Add carrot, seaweed, vinegar, tamari, and syrup. Simmer 10 minutes. Add and adjust salt and peppers if you wish.
Top with sesame seeds. Serve hot or cold. Enjoy!
