Soynog

Yield: 1 Serving
Ingredients
1 cup soy milk
1 tbs soy milk powder
1/4 tsp vanilla
1 tsp corn, canola OR flax seed oil
1 tsp lecithin (liquid or granules)
1/8 cup - to - 1/4 cup almonds
1/4 tsp nutmeg
1 tsp carob powder (optional)
1 pn turmeric (optional)
Seasonings (see directions)
Directions
Grind the almonds first in the blender
dry. Add the rest of the ingredients and blend until light and fluffy. Can be served cold
or hot (do NOT boil!). For variation sprinkle the top with one or more of the following: anise seed; coriander; organic orange or lemon rind gratings; powdered cardamom
If your soy milk is not very sweet, then add a little honey or other liquid sweetener to the above. Stevia may also work to sweeten this recipe. If you
can't find soy milk powder, then try thickening the soynog with 1/2 to one fresh banana.
If you want that slippery taste of "real" eggnog then just add more oil;
however, your taste buds may come to like this soynog just as it is.
