Sweet Potato Bake
Yield: 1 recipe     VG, VN, WF, GF, SF, EF

Sweet Potatoes
Olive Oil
Maple Syrup
Red curry paste

Curry powder
Kelp flakes
Thickening agent (such as cornstarch) *
Sesame seeds

This is a very loosely guided recipe. All ingredients are to your own taste and portion preference.

Cut sweet potatoes into small pieces. Cook in boiling water until soft. Mash with olive oil.

In a saucepan combine maple syrup, red curry paste, curry powder kelp flakes and a spoonful of thickening agent. Stir occasionally; keep on low. Line a lightly oiled baking dish with sweet potatoes. Pour sauce over top. Bake at 350 F. until glaze is formed. Sprinkle sesame seeds on top.

* Note: thickening agents often mix in more easily when whisked with a small amount of water before adding to the pan.
