ZucchiniZucchini Linguini

VN, GF, SF

Ingredients

2 cups onions, chopped
1/2 cup green pepper, chopped
2 cups zucchini, cubed
Garlic, minced, to taste
Tomato sauce, to taste
Seasonings of choice
Linguini noodles, cooked

Directions

Saute onions and green pepper until soft (about 10 minutes). Add zucchini and garlic. Simmer 10 more minutes. Add tomato sauce to desired consistency, and heat through. Season. Add a spoonful of lemon juice and a little sugar for a fuller taste. Serve over linguini noodles (choose whole grain, wheat-free or gluten-free noodles depending on your dietary needs/preference).
