Buckwheat Buttermilk Pancakes
Yield: 12  VG, WF, SoF, NS

1 ts Dry yeast
1 1/4 to 1 1/2 c Buttermilk
-- depending on desired
-- consistancy
1 c Buckwheat flour
1/2 c Barley flour
3 tb Spelt flour
1 c Lukewarm water
1/2 ts Salt

Dissolve dry yeast into lukewarm water. Add buttermilk (use 1 1/4 cups or up to 1 1/2 cups depending on desired consistency), both flours, and salt, then mix well. Let set overnight. Bake the next day on a hot griddle.
