Chewy Chocolate-Peanut Bars

VE, GF, SF

Peanuts In ShellIngredients

3/4 cup honey
1 cup all-natural peanut butter
1 cup special dark chocolate chips
1 1/2 cups mini-marshmallows
3 cups crispy rice cereal
1 cup chopped peanuts
1/2 tsp sea salt (omit if using salted peanuts)

Directions

In large saucepan over medium heat, melt together honey and peanut butter and bring to a boil. Add chocolate chips and marshmallows, stirring until smooth. Add the cereal, peanuts and sea salt.

Blend well and remove from heat. Pour into a lightly greased 9 x 13 pan and pat firmly with spatula. Let cool slightly and cut into bars before hardening in the fridge.

I found this recipe on the Internet but don't remember the site; the ingredients were slightly modified to include healthier choices."

This recipe can be made vegetarian if appropriate marshmallows are used, such as those by VeganSweets. These marshmallows contain soy protein so the recipe will no longer be SF (soy free). For a completely vegan recipe you can try replacing the honey with brown rice syrup.
