Granny Smith Buckwheat Muffins

Ingredients
2 ea apples, granny smith; peeled and diced (1/4 inch)
1 cup honey
1 lg egg; beaten lightly
1/2 cup oil
1 tsp vanilla extract
1 cup buckwheat flour; light or whole
1 cup spelt or whole wheat flour
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
1 cup raisins
1 cup walnuts; coarsely chopped
Directions
Toss together apples and honey in large bowl. Whisk or beat together egg, oil and vanilla. Combine buckwheat flour, spelt or whole wheat flour, baking soda, cinnamon and salt. Stir egg mixture into apple mixture. Add flour mixture and stir just enough to combine (batter will be stiff). Stir in raisins and walnuts. Divide batter among 16 to 18 well greased muffin cups. Bake in middle of 325 degree oven for 20 minutes or until done. Serve warm or cold.
