QUICK & EASY MUFFINS
VG, GF, DF

Yield: 12 muffins

Ingredients

1/2 cup honey
1/4 cup oil
2 eggs
1 1/2 cups brown rice flour
2 tsp baking soda

1/4 tsp cream of tartar
1/2 cup soy milk
2 tsp cinnamon
4 tsp brown sugar

Directions

In a mixing bowl, mix together honey and oil. Then beat in the eggs. Sift together the flour, baking soda and cream of tartar. Add to the egg mixture alternately with the soy milk. Don't overbeat. These are best mixed by hand.

Mix together brown sugar and cinnamon. Pour batter into greased muffin cups 1/2 full. Sprinkle half the cinnamon mixture on top. Pour in remaining batter and sprinkle on remaining cinnamon mixture.

Bake at 350 F for 15 minutes.
