Quick Quiche
Yield: 1 Recipe  WF, GF, SoF

1 c Broccoli, carrots or asparagus--
-- OR left-over veggies
1 1/2 c Cheddar cheese
1/4 c Onion
3 slices ham, corned beef,--
-- OR left-over meat *
2 c 2% milk
4 Eggs
1/2 c Potato or rice flour
1 ts Baking powder
1/2 ts salt
Pinch, pepper

Combine veggies, cheese, onion and meat in food processor and grind.  Put this in bottom of a large pie plate.   Combine milk, eggs, flour, salt, pepper and baking powder.  Blend for 1 minute.  Pour over veggies.  Bake at 325 degrees for 45 minutes.  Let stand 5 minutes and serve.

* WEBMASTER'S NOTE:   Vegetarians can substitute extra veggies in place of the meat.
