Soy Muffins
Yield:  1 Recipe

3 Large eggs (or 4 sm to med)
1/2 c Oil
3/4 c Honey
1 c Water
2 c Soy flour
2 ts Baking soda
1/2 ts Cream of tartar--OR--
1 ts --to 1 1/2 ts baking powder
1/2 ts Salt
1 ts Cinnamon
Blueberries, to taste

Mix liquid and dry ingredients (except blueberries) in separate bowls. Add liquid mixture to dry and combine with a few swift strokes. Fold in blueberries. Fill muffin cups and bake at 375 F. for 20 minutes.

Variation: Fill muffin cups 2/3 full, place a few blueberries or a teaspoon of your favourite jam in the centre, then cover with batter to fill cups.
