Mix together the flour, salt, baking soda
and vitamin C crystals. Add the oil and stir until it is thoroughly mixed in to form small
crumbs. Add water 2 tablespoons at a time, mixing well after each addition. Knead dough on
a lightly floured board 1 - 2 minutes. Divide dough in half and roll each half out on an
oiled baking sheet with an oiled rolling pin to about a 10 x 14 inch rectangle. The dough
should be very thin - about 1/16 to 1/8 inch thick. Cut dough into 2-inch squares and
prick each three times with a fork. Sprinkle with additional salt if desired. Bake at 350
degrees for 10 - 14 minutes or until golden brown and crisp. Makes 6 - 7 dozen crackers.
Hint: At the end of 10 minutes remove baking sheet from oven and lift the irregularly
shaped crackers around the outer edge to a wire rack. Separate remaining crackers and
return them to the oven for another 3 - 4 minutes to crisp.
"I felt this recipe needed
a little less water than what is called for (about 1/4 - 2 tbsp). I sprinkled a few sesame
seeds on top and rolled them in slightly with a rolling pin before cutting into squares.
The crackers turned out nice and crisp. . . yummy!"
