Ingredients
- 1/4 cup unsweetened flaked coconut
- 3 tablespoons sugar
- 2 teaspoons garam masala
- 1 teaspoon curry powder
- 1/2 teaspoon ground turmeric, optional
- Kosher salt
- Vegetable or canola oil, for the baking sheet
- 1 large egg white
- 4 cups unsalted raw cashews
Method
Step 1
Mix together the coconut, sugar, garam masala, curry powder, turmeric if using and 1 1/2 teaspoons salt in a small bowl and set aside.
Step 2
Preheat the oven to 350 degrees F. Lightly coat a rimmed baking sheet with oil.
Step 3
Put the egg white in a large bowl and whisk until frothy. Add the cashews and toss to coat in the egg white. Add the spice blend and toss to coat.
Step 4
Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.
