Ingredients

  • 4 porcini mushrooms, sliced very thin on a mandoline
  • Kosher salt and freshly ground black pepper
  • Extra-virgin olive oil, for drizzling
  • Fresh lemon juice
  • Shaved Parmesan, for serving

Method

Step 1

Arrange the mushroom slices on a large platter. Season with salt and pepper, drizzle with olive oil and add lemon juice to taste. Top with a light coating of shaved Parmesan.
